Italian Sicilian Spaghetti

Italian Sicilian Spaghetti - The is not a recipe of ordinary baked
spaghetti. Dish is first lined with bread crumbs and fried brinjals,
filled with cheesy mince spaghetti, topped with cheese and then baked.
Ingredients
- Mince 250 gm

Brinjal 2

Tomatoes finely chopped 3

Onion chopped 1 cup

Boiled spaghetti 2 cup

Oil 1/4 cup

Peas boiled 1/2 cup

Cheddar cheese grated 1/2 cup

Mozzarella cheese grated 1/2 cup

Crushed red chili 1 tsp
-
Oregano leaves 1 tsp
-
Salt 1 tsp
-
Garlic crushed 1 tbsp

Black pepper 1/2 tsp
-
Bread crumbs 2–3 tbsp
Cooking Directions
- Cut each brinjal into thin slices and fry with 2 tbsp oil.

In other pan heat oil, add chopped onion and fry till soft.

Add garlic paste, chopped tomatoes, salt, black pepper, crushed red chili and oregano.

Fry for 5 minutes.

Now add mince, cook for 10 minutes.

Add boiled peas with 1/2 cup water, cover and cook till mince is done.

Add in half of both cheese and spaghetti to the mince, mix well.

Grease an oven proof dish,

Sprinkle bread crumbs, so they coat the bottom and sides of the dish.

Spread fried brinjals on the bottom and sides of the dish.

Spoon the filling, press down.

Sprinkle remaining cheese, bake for 10 minutes on 180 degree C till cheese melts.
