How To Make Achari Hara Mutton, Karahi Liver Masala And Achari Paratha by Shireen Anwer


Ingredients for Achari Paratha:

  • Flour 1 cup
  • Wheat flour 1 cup
  • Salt 1/2 tsp
  • Water to knead

For Filling:

  • Achaar masala as required
  • Ghee as required

Ingredients for Achari Hara Mutton:

  • Mutton 1/2 kg
  • Green chillies 2 thinly sliced
  • Salt 1 tsp
  • All spice 1 tsp
  • Coriander powder 1 tsp
  • Yogurt 1 cup
  • Coriander leaves 1/2 cup

For Onion Paste:

  • Onion 2
  • Green chillies 8
  • Ginger garlic 1 tbsp
  • Coriander leaves 3 tbsp

For Achaari Masala:

  • Fennel seeds 1 tsp
  • Cumin seeds 1 tsp
  • Mustard seeds 3/4 tsp
  • Fenugreek seeds 1/4 tsp

For Bhagar:

  • Oil 1/4 cup
  • Mustard seeds 1/2 tsp
  • Black seeds 1/2 tsp

Ingredients for Karahi Liver Masala:

  • Liver 1/2 kg
  • Chilli powder 2 tsp
  • Ginger garlic paste 1 tbsp
  • Salt 1 tsp
  • Tomato 1 chopped
  • White cumin crushed 1 tsp heaped
  • Yogurt 2 tbsp
  • All spice 1 tsp
  • Kasori methi 1 tbsp
  • Green chillies 8
  • Ginger Julian 1 tbsp
  • Oil 1/2 cup
