How To Make Drumstick Masala



Drumstick Masala

Drumstick Masala can be prepared in 30 minutes and serves 2-4 people.

Recipe Ingredients

1/2 kg Chicken drumsticks
2 Chopped tomatoes
3 Green chilies
4 Green cardamom
1/2 cup Yogurt
1/2 cup Onion fried and grinded
1/4 cup Oil
1 tsp Ginger garlic paste
1 tsp White cumin crushed
1 tsp Salt
1 tbsp Ginger juliennes
2 tsp Chili powder
1/4 tsp Turmeric
1/2 tsp All spice
2 tbsp Green coriander chopped

Recipe Method

Give cuts on each drumstick, heat 1/4 cup oil in pan, add 1 tsp heaped ginger garlic with 2 tsp chili powder, 1/4 tsp turmeric, 1 tsp crushed white cumin, 1 tsp salt, 4 green cardamom, 2 chopped tomatoes and 1/2 cup yogurt, fry well, add drumsticks and fry well, add 1/2 cup ground brown onion. Also add 1 cup of water, cover and cook till drum sticks tender. Lastly add 1/2 tsp all spice, garnish with 2 tbsp chopped coriander, 3 green chilies and ginger juliennes.

Chicken Green Botti can be prepared in 30 minutes and serves 2-4 people.

Recipe Ingredients

1/2 kg Chicken boneless
10 Green chilies grinded
1/2 packet National Chicken Hara Masala
1 tbsp Ginger garlic paste
1/2 tsp White pepper
2 tbsp Lemon juice
2 tbsp Yogurt
3 tbsp Coriander leaves grinded
4 tbsp Cream tetra pack

Recipe Method

Grind together 3 tbsp coriander leaves and 10 green chilies, marinate boneless chicken with 1 tbsp ginger garlic paste, 4 tbsp Cream tetra pack, 1/2 tsp White pepper, 1/2 packet of National Chicken Hara Masala, 2 tbsp Lemon juice and 2 tbsp Yogurt. Leave it for 1 hour, put on skewers and grill over open flame.

Recipe Ingredients

250 gm Macroni pasta
2 Egg beaten
3/4 cup Freshly grated parmesan cheese
2 tbsp Bread crumbs
Meat sauce
2 tbsp Olive oil
2 Onion finely chopped
750 gm Beef mince
400 gm Canned tomatoes
90 gm Tomato paste
1/2 cup Beef stock
1/2 tsp Ground cinnamon
1 Egg
Cheese topping
90 gm Butter
1/2 cup Flour
3 1/2 cup Milk
1 cup Parmesan cheese
2 Egg yolks

Recipe Method

Preheat oven to 180 C oil an oven proof dish.
cook the pasta, drain the water then combine the hot pasta, egg and cheese in a large bowl. press the pasta at the base of the dish.
To make the meat sauce:
heat oil in a large pan add the oil,onions and mince and cook for afew minutes until beef is browned. stir in undrained tomatoes, tomato paste,stock and leave to simmer uncovered for about 15 minutes. once cooked cool and stir in the egg.
For the cheese topping. melt butter in a saucepan add flour and cook until mixture bubbles and thickens. remove from heat and gradually mix in the milk. stir over heat until sauce boils and thickens stir in cheese. cool for 5 mins and stir in egg yolks pour the meat sauce over the pasta and then top with the cheese sauce and bread crumbs place in the oven and bake for 30 -40 minutes till golden brown.

Recipe Ingredients

8-10 Prawns
1 bottle Soda
2 cup White flour
3 Egg
1 tsp Baking powder
1 tsp Black pepper powder
1 tbsp Chicken flour
for frying Oil
to taste Salt
250 gm Prawns
for Batter
100 gm Rice flour
100 gm Wheat flour
100 gm Corn flour
2 Pinch Salt
as required Ice Chilled water
For Tempura Sauce
3 tbsp Japanese soya sauce
1 tsp Crushed red pepper
2 tsp Castor sugar
1 tsp Oil
2 tsp Spring onion chopped
1 tsp Garlic chopped

Recipe Method

Wash the prawns, cut lengthwise and flatten with the blunt end of a knife.
In a bowl add 2 cups of white flour, 2 tbsp corn flour, 1 tsp baking flour, 1 tsp black pepper powder, salt as required, and 1 bottle of soda. Mix well
In a  second bowl beat 3 eggs. Dip each slice of prawn into the flour mixture followed by the beaten eggs .Repeat the process 5 times and deep fry till olden brown.

Recipe Ingredients

1 Liter Milk
1/2 cup National Vermicelli
1 tbsp Ghee
3 White cardamom
4 sliced Dry dates
3 tbsp Pistachio sliced
3 tbsp Almonds sliced
1/2 tsp Saffron
1/2 cup Sugar
2 tbsp Khoya

Recipe Method

Heat 1 tbsp ghee add 3 white cardamom with 1/2 cup National vermicelli and brown then add 1 kg milk with 4 sliced dry dates, cook for 5 minutes till dates soft add 1/2 cup sugar, 2 tbsp khoya, 3 tbsp almonds, 3 tbsp pistachios, 1/2 tsp saffron cook for 5 minutes, serve hot or cold.

Recipe Ingredients

1 kg Chicken
1 cup Oil
3 tsp heaped Ginger garlic paste
3 tsp heaped Chili powder
4 tsp Coriander powder
2 tsp heaped Salt
1 1/2 cup Brown onion
2 cup Yogurt
1/4 tsp Nutmeg grinded
1/4 tsp Mace grinded
1/2 tsp Green cardamom grinded
2 cut into thick slices Tomatoes
8 Whole green chilies
1/2 tsp Saffron
1 cup Milk
pinch Yellow color
1 tbsp Whole spices
1 tsp Whole mix spices
750 gm boiled with 3 tbsp salt Rice
1 tsp Black cumin
4 cut into cubes and deep fried Potatoes

Recipe Method

Boil 750 gm rice with 3 tbsp salt and 1 tsp whole mix spices till 1/2 done remove and keep aside, heat 1 cup oil add 1 tbsp whole spice and 1 kg chicken, fry for 5 minutes then add 3 tsp ginger garlic paste, 3 tsp chili powder, 2 tsp salt, 4 tsp coriander powder and fry well then add 1 1/2 cup fried onion with 1 cup water cover and cook till 1/2 done then add 2 cups beaten yogurt, with 4 fried potatoes cover and cook for 10 minutes, lastly add in 1/4 tsp grinded nutmeg, 1/4 tsp mace and 1/2 tsp green cardamom.
To assemble
In a pan put 1/2 boiled rice, topped with chicken mixture 8 whole green chilies, 2 tomato sliced, coriander leaves, then top with remaining rice, 1/2 cup of brown onion, sprinkle 1 cup milk with pinch of color and 1/2 tsp saffron, topped with 1/4 cup ghee, put simmer for 15 minutes.

Recipe Ingredients

1 kg Chicken
5 to 6 Green chilli
1 1/4 cup Yogurt
1 tbsp Garlic paste
1 tbsp Ginger paste
2 tbsp Genger juliennes
as required Oil or Ghee
1 packet National white karahi masala

Recipe Method

Heat oil, fry 1 tbsp of each ginger and garlic paste. Add 1 kg chicken and fry for 5 minutes. Now add 1-1/4 cup yogurt and 1 packet of National White Karahi Masala. Cook on low flame till chicken is tender. Also add some water if required. Then add ginger juliennes and 5 to 6 green chilies. Simmer for 5 minutes. Lastly garnish with chopped coriander leaves and serve with Nan.

Recipe Ingredients

1/2 Kg Prawns
1/4 cup Oil
2 Onion chopped
1 tbsp Ginger garlic paste
20 Curry leaves
1 1/2 tsp Chili powder
1 1/2 tsp Coriander powder
1/2 tsp Turmeric
1/2 tsp Crushed red pepper
1 tsp Salt
1 tsp Dry fenugreek leaves
2 Tomatoes chopped
6 Green chilies chopped
2 tbsp Coriander leaves

Recipe Method

Heat 1/4 cup oil fry 2 chopped onion light golden, add 1 tbsp ginger garlic paste, also add 2 chopped tomatoes with 1 1/2 tsp chili powder, 1/2 tsp turmeric powder, 1 1/2 tsp coriander powder, 1/2 tsp turmeric powder, 1 tsp salt, 1/2 tsp crushed red pepper and fry well till oil comes on top, add 1/2 kg prawns with 6 chopped green chilies, 2 tbsp coriander leaves, 1 tsp dry fenugreek leaves and simmer for few minutes. Lastly add ginger slice and 20 curry leaves.

How To Make Shola

Recipe Ingredients

1/2 kg Rice
1/2 kg Mutton mince
1cup Yellow lentils with husk
1/2cup Yogurt
2 cups Chopped spinach
2 tbsp Dill chopped
2 Onion sliced
3 tsp Ginger garlic paste
3 tsp Chili powder
1/2tsp Turmeric
2 tsp Salt
1/2tsp All spice powder
2 chopped Tomatoes
2 tsp Coriander powder
1cup Oil

Recipe Method

Wash and soak 1/2 kg  rice and 1 cup yellow lentils. Fry 2 sliced onions in 1 cup oil till light golden in color. Take  out half of the  onions and oil and keep aside for garnishing. Add 1/2 kg mince mutton, 3 tsp ginger garlic paste, 3 tsp chili powder, 1/2 tsp turmeric powder,2 tsp  salt, 2 tsp coriander powder with 2 finely chopped tomatoes and cook till mince is half done. Add in 2 cups chopped spinach and 1/2 cup yogurt cook for 10 minutes then add the soaked rice and lentils with 3 cups of water, cover and cook till all done.Lastly add dill and mix very well with wooden spoon. Before serving garnish it well with brown onions, green chilies, sliced ginger  and left over oil.

How To Make Three Colored Zarda

Recipe Ingredients

1/2 kg Basmati rice
1/2 kg Sugar
8cup Water
1/2cup Ghee
6 Green cardamom
6 Clove
1/2cup Coconut slices
1cup Khoya
2 tbsp Almonds sliced
2 tbsp Pistachio sliced
2 tbsp Ashrafis sliced red
2 tbsp Ashrafis sliced green
few drops Red color
few drops Green color
few drops Yellow color

Recipe Method

Soak 1/2 kg rice for half an  hour, boil 8 cups water with salt, 6 green cardamoms  and 6 cloves, add rice and cook till nearly done, drain and keep aside, in a pan put 1/2 cup ghee with 1 cup water and 1/2 kg sugar and cook, stirring until the  sugar dissolves and turns  into a  thick syrup, when the syrup starts to boil add in boiled rice along with  2 tbsp sliced almonds and 2 tbsp sliced pistachioes, cover pan and cook on a medium flame, open lid after 5 minutes, when the syrup  starts to dry, lower flame add in all the three colors, simmer for 10 minutes, lastly sprinkle 1 cup khoya and 2 tbsp green and red color  ashrafis.

Recipe Ingredients

Tin Pineapples
50 gm Flour
50 gm Butter
200 gm Sugar
4 Eggs
1 tbsp Baking powder
1tsp Vanilla essence
as required Pineapple syrup

Recipe Method

Sieve 3 ounce flour, 2 ounce corn flour and 2 tsp baking powder together, beat 6 ounce butter until light by gradually adding 6 ounce caster sugar, add 3 eggs and flour alternating then fold in the 3 peeled and grated apples and 2 tbsp lemon juice, pour mixture in a greased and paper lined 8 inches baking pan, brush top with lightly melted butter, sprinkle 2 ounces flaked almonds and 2 tbsp granulated sugar, bake in a pre-heated oven for 35 to 40 minutes on 180 degree C.

Ingredients for dough
16 ounces or 4 cups Flour
1 tbsp Yeast
2 tbsp Powder milk
1tsp Salt
4 tbsp Oil
1+1 Eggs
1tsp Castor sugar
Ingredients for chicken filling
1 1/2cup Chicken boil and shredded
1 Onion chopped
1tsp Salt.
1tsp Black pepper
2 tbsp Coriander leaves
4 Green chilies chopped
1tsp All spice
2 tbsp Flour.
2 tbsp Butter
1cup Milk
as required Sesame seeds

Recipe Method

Method for dough
In a bowl mix together 4 cups flour, 1 tsp salt, 1 tsp castor sugar, 2 tbsp milk powder, 1 tbsp yeast, 4 tbsp oil and 1 egg, knead to a medium soft dough with water, leave to rise for 1 hour.
Method for filling
Heat 2 tbsp  butter fry 1 chopped onion till soft add2 tbsp  flour with 1 tsp salt, 1 tsp black pepper, 1 tsp all spice, 1 cup milk, cook till thick, mix in 1 1/2 cup shredded chicken add 4 chopped green chilies and 2 tbsp coriander leaves, remove and cool filling now roll the dough to a rectangular shape, snipped the edges sides with scissor on knife, put filling in the centre and fold each side so they overlap each other the filling will show slightly, brush top with 1 beaten egg, sprinkle sesame seeds and bake on 200 degree C for 25 minutes.

Burns Road Ki Dahi Phulki can be prepared in 30 minutes and serves 2-4 people.

Recipe Ingredients

1cup Moong ki daal ka aata
1/2cup Water
1tsp Salt
1 1/2 tsp Soda by carb

Recipe Method

In a bowl mix together 1 cup moong ki daal ka aata, 1 1/2 tsp soda and water, mix very well with hands, keep for 10 minutes, then heat oil in a wok and drop little balls into oil and fry on slow fire. When slightly brown remove, again put them back to fry on high flame to a golden brown, remove in a tray and leave them to cool.
Iin another pan add water with 1 tbsp salt, put in the fried balls, let them soaked for 1 hour then squeezed out water from balls and put directly into yogurt mixture, serve sprinkle with dahi phulki masala.
Yogurt mixture
Yogurt 1 kg strain in a muslin cloth well and mix with half cup of caster sugar and 1/4 tsp salt.
